Stella Blue is now open at SayeBrook Town Center

Known for its focus on connection, quality ingredients, and a laid-back atmosphere, Stella Blue has built a following around more than what’s on the menu. Rooted in a love for good food and good company—with a subtle nod to Grateful Dead-inspired culture—Stella Blue offers a space where people can slow down, meet up, and enjoy the moment.

Originally founded in Huntington, New York, Stella Blue became a popular spot for people to connect over great food. Inspired by owners Anmarie and Rob Koopman’s love of Grateful Dead music and their passion for serving home-cooked meals, the bistro brings that same laid-back spirit to SayeBrook. The menu features organic coffee, fresh smoothies, handcrafted cocktails, and a wide selection of breakfast and lunch favorites, all served in a warm, friendly atmosphere.

“We love the SayeBrook community,” said Rob Koopman. “From the moment we visited, we knew we wanted to be a part of what was being created here. Our hope is that Stella Blue becomes a place where people feel at home, share a great meal, enjoy time with family and friends, and leave feeling a little happier than when they arrived.”
